Enchiritos


1 lb. ground beef (I used more like 2 lbs)
1 small onion (can use onion powder to taste if your family isn't big on onions)
12 oz can refried beans
4 oz can green chilies, drained and chopped(optional)
2 10-oz cans enchilada or taco sauce (I used one package Kroger brand enchilada sauce, added about 8oz ketchup-was out of tomato sauce, and 1 1/2 cups water) For the enchilada sauce on top I used Kroger brand green enchilada sauce with chilis)
12oz shredded cheddar cheese
2 pkgs. flour tortillas


Preheat oven to 350. Fry the beef and onions. Drain.
Add the beans, 1 can of the enchilada sauce and the chilis. Heat through and blend well.
Spoon 3 or 4 TBS of the mixture onto center of each tortilla. Top with some cheese, and roll up, enclosing the sides.
Layer in a 9x13 pan. Pour the other can of sauce evenly over all and cover with additional cheese.
Bake for 20 minutes or until heated through and cheese is melted.
This makes a HUGE batch of enchiladas, and they taste great! I made 12, and had about 2 cups of the mixture left over to freeze.
